Pigs Feet and Chickepea Stew from La Cocina del Nieto.

Today we're cooking a Puerto Rican classic that always takes me back to the island: Patitas con Garbanzos (Pig’s Feet with Chickpeas). For this version, we used a recipe from my friend Chef Edgardo Noel, straight from his new book La cocina del nieto 2. We also used his garlic and sofrito, which give the dish a flavor you can truly taste in every bite.

Ingredients:
1 pound of pig’s feet (455 g) – Get them fresh at Thrifty.
¼ pound of diced cooking ham (115 g)
Thrifty Argentinian sausage
½ cup of tomato sauce (115 g)
10 ounces of cooked or canned chickpeas (215 g)
4 ounces of diced pumpkin (115 g)
2 culantro leaves (recao)
1 tablespoon of Chef Edgardo Noel’s sofrito – Available at Thrifty.
1 tablespoon of Chef Edgardo Noel’s garlic – Available at Thrifty.
Instructions:
Desalt the pig’s feet:Soak them in water overnight, changing the water at least 3 times to remove excess salt.
Cook the pig’s feet:Boil them for 1 hour until tender. Reserve 2 cups of the cooking water.
Make the base:In a separate pot over high heat, sauté the ham and sausage for 2 minutes.
Add flavor:Stir in the tomato sauce, Chef Edgardo Noel’s sofrito, and garlic. Cook for 1 more minute.
Build the stew:Add the pig’s feet, pumpkin, chickpeas, culantro leaves, and the 2 cups of reserved cooking water.
Let it simmer:Cook over medium heat until the pumpkin softens and the broth thickens to your liking.
