Pioco’s Chicken is officially in the final stretch of one of the most important projects in its history. After years of planning, pauses, adjustments, and sacrifice, the new main location at 5160 Boggy Creek Road is fully built and is now awaiting final county inspections before opening its doors.
If everything moves as expected, the opening is projected for early March—and God willing, it could happen even sooner, depending on how quickly the final inspections are completed.

A Dream That Took Time
The new main building for Pioco’s Chicken did not happen overnight. This project took nearly 10 years to complete, from the original vision to the finished space that now stands ready. It is a clear reminder that some dreams take time, patience, and unwavering faith to become reality.
Miguel Fontanez Jr., who now leads the day-to-day operation of the restaurant, is excited and grateful to be so close to serving the community from this new space. His father, Miguel Fontanez Sr., is the founder of Pioco’s Chicken and the person who brought the brand to life from the very beginning.
The Heart of the Operation: Rotisserie at Scale
At the center of the new location are two Doregrill MAGFLAM Series Gas rotisseries, each with 8 spits and a capacity of up to 56 birds. These machines are not only the operational heart of the restaurant, but also a key visual and aesthetic element of the space.
Beyond their capacity and efficiency, the rotisseries reinforce Pioco’s identity—fire, technique, and volume working together to deliver consistent, high-quality pollo a la brasa.

Commissary Kitchen and Catering Expansion
One of the biggest upgrades in this new location is a brand-new commissary kitchen. This addition positions Pioco’s Chicken to significantly expand its catering operation, allowing the brand to handle larger events, corporate orders, and high-volume production without compromising quality.
With this infrastructure in place, Pioco’s is fully prepared to scale its catering services in an organized and professional way.

Ready to Serve the Community
In addition to its dining and production capacity, the new Pioco’s Chicken location includes a dedicated room exclusively for online orders and pickup. This space was designed to streamline digital orders and ensure food moves quickly and efficiently—getting straight to customers without disrupting in-house operations.
This focus on online ordering and pickup reflects how people eat today: at home, at work, or on the go. The entire system is built to make sure the food arrives fresh, hot, and with the same quality customers expect in the dining room.
With the building complete, equipment installed, and systems ready, Pioco’s Chicken is preparing to open in the Boggy Creek / Lake Nona area—bringing a thoughtfully designed, large-scale operation that still stays true to its roots.
This project is more than a new location. It is the culmination of a long-term vision, a testament to perseverance, and a clear sign that Pioco’s Chicken is ready for its next chapter.
