We traveled to Saint Cloud, FL, to visit Cakes, Pastries & More, a local business led by owner and pastry chef Laura Figueroa, who opened the doors of her kitchen to show us her process, recipes, and vision.

She also prepared her avocado toast using her oat bread, a lighter and well-balanced option that works perfectly for this type of dish.
The Story Behind the Business
The story of Laura Figueroa goes far beyond baking. Laura was married to Rafael Figueroa, a veteran, whom she lovingly cared for until he passed away last year.
Rafael was one of the biggest motivations behind Laura’s journey into baking. During his illness, she learned to cook and bake with special diets in mind, as he was on dialysis. That experience strengthened her skills and gave deeper purpose to her work in the kitchen.
Before becoming a full-time baker, Laura owned a beauty salon. Over time, baking became a form of personal therapy, a space for healing, creativity, and expression.
After moving to Florida, she made the decision to fully dedicate herself to baking and turn her passion into a business.
She also wanted to teach her daughters the value of hard work, effort, and building a living with discipline and purpose. In addition, her father was a constant source of motivation. When Laura decided to open her business in Saint Cloud, he gave her his unconditional support, helping give her the strength to take that step.
